How and where were the soundtracks to Disney movies recorded?

I'd love to see videos of the orchestra and conductor to tracks like "Short Hair" in Mulan, "Fireworks" in Little Mermaid, or any other image-painting music from Disney movies written by Alan Menken and Jerry Goldsmith. I would be sad to find out that it was never taped. I'd really appreciate the help in finding these videos or recordings!
